Three Easy Recipes
As healthcare professionals, we’re always on the go. Here are three quick and healthy meals that can be easily taken with you––no matter how short you are on time.
Eggs and Spinach
2 egg whites
½ cup Spinach
Garlic parsley
Salt
½ teaspoon olive oil
In a bowl separate two eggs, discard yokes and gently scramble while adding a pinch of salt and a sprinkle of garlic parsley. Heat frying pan on medium flame and add oil. Add egg mixture then toss in spinach and fold egg. Gently sear on each side. (Total time 6 minutes)
Oatmeal with Fruit
1/2 cup oatmeal
½ cup water
½ cup 2% or low-fat milk
1 tsp. vanilla
1 ripe banana sliced
Pinch of salt
Add water to a small pot on medium flame, bring to boil and add oats. While stirring add milk, salt and vanilla. Boil for 2 minutes then add sliced bananas and serve. (8 minutes)
