Three Easy Recipes

As healthcare professionals, we’re always on the go. Here are three quick and healthy meals that can be easily taken with you­­­­­­­­­­­­­­­­­––no matter how short you are on time.

 

Eggs and Spinach

2 egg whites

½ cup Spinach

Garlic parsley

Salt

½ teaspoon olive oil

In a bowl separate two eggs, discard yokes and gently scramble while adding a pinch of salt and a sprinkle of garlic parsley.  Heat frying pan on medium flame and add oil. Add egg mixture then toss in spinach and fold egg.  Gently sear on each side. (Total time 6 minutes)

 

Oatmeal with Fruit

1/2 cup oatmeal

½ cup water

½ cup 2% or low-fat milk

1 tsp. vanilla

1 ripe banana sliced

Pinch of salt

Add water to a small pot on medium flame, bring to boil and add oats.  While stirring add milk, salt and vanilla. Boil for 2 minutes then add sliced bananas and serve. (8 minutes)

 

Vegetable Soup

1 cup vegetable medley

I cob of corn cut into 3pieces

I pack pumpkin soup mix

3 cups water

1 small tin cannellini beans

Salt and pepper

In a medium pot add water and bring to boil.  Add vegetable medley, beans and corn. Let pot simmer for 5 minutes then add pumpkin soup mix and allow to simmer for another 10 minutes.  Add salt and pepper to taste then serve. (Total time 25 minutes)
